A rich, deeply savoury bowl built on a beef and onion broth simmered slowly over 72 hours, then finished with Wagyu beef cheek, Comté, smoked bacon foam and a golden Gruyère puff pastry crown. It is the dish our guests come back for, and often the reason they first walk through our door on Club Street.
