Whether you are a cooking enthusiast, French cuisine lover or Onion soup lover, this simple guide will help you create the perfect bowl of French onion soup from scratch. Here is how:

Step-by-Step Guide to Homemade French Onion Soup

1. Sourdough Croutons: We use our in-house sourdough bread (but you can get it from any bakery). Bake it, cut into crouton-sized pieces, and bake again. (This takes a day, but it’s worth it!)

2. THE Beef Stock: Sear beef oxtail and simmer for hours (at least 8 hours) to make a rich and flavourful beef stock. I recommend preparing it a day in advance.

3. THE Onions: Peel and thinly slice onions (What type of onions) and banana shallots (What is banana shallots?) by hand—expect a bit of time for this (and some tears of joy).

4. Caramelise the Onions: Slowly cook the onions down to about one third of their original volume, bringing out their deep, sweet flavours. Remember to cook them at low heat and slow fire. (This takes about 2 hours)

5. Combine & Braised: Add your prepared beef stock to the caramelised onions and slow-braised the mixture for a rich, deep flavour.

6. Seasoned & Save: Perfect the seasoning to taste and keep the soup warm until you’re ready to serve.

7. Cheese Prep: Grate Emmental and Gruyere cheese for that perfect melty topping.

8. Serve & Broil: In each bowl, add caramelised onions, broth, sourdough croutons, and shredded cheese. Broil for a couple of minutes until the cheese is golden and bubbly.

All that is left is to enjoy! At La Table d’Emma, this classic is served at $22 ONLY! Follow the video and our simple steps to bring this soul-warming dish to life in your own kitchen.
